This work focuses on the common problem of yearly recurring months of food insecurity faced by small-scale coffee farmers in Central America. This work identifies the main causes of this problem and proposes strategies to for small-scale coffee farmers in Marcala, Honduras to overcome them. This work proposes income and crop diversification through increased vegetable production as a solution to tackle this problem.
